This software manages to hit that sweet spot of lots of user controllable functions but unburdened by rampant featuritis. Want to change something? Just double-click on it, that will likely do it - you won't have to navigate through a zillion menus. I use KaleidaGraph (KG) for nearly all my graphing needs and a lot of analysis gets done on it as well. The quality of the plots is better than what you see in a lot of publications.
